This Is A Waffle?

What's the first thing that comes to your mind when you think of a waffle...breakfast, syrup, sweet?  Waffles can be a very versatile food.  They can be sweet, savory, spicy, crunchy, cake-like.  They can be eaten for breakfast, lunch, dinner, our even dessert.  The possibilities are endless.  

Though many might not want to consider some alternatives, some unconventional waffles might become some of your favorite.  When I purchased my waffle maker, I stuck to the traditional waffle, but once my creativity kicked in, new doors opened up.  "Unconventional" waffles became a staple in my kitchen and my husband and kids couldn't wait to see what was going to come out of my waffle maker.

Introducing the potato waffle.  Here is a basic recipe that can be altered to meet your taste and needs. Enjoy!

Ingredients:

1 large spiralized potato
1 egg
1 tablespoon olive oil
Adobo all purpose seasoning to taste
 

Directions:

Preheat your waffle iron. In a large pan, heat olive oil using medium heat.  Add spiralized potato and Adobo seasoning (you may add any seasoning you want). Cook for 5-7 minutes, tossing frequently until potato is cooked. Set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat egg and add it to the bowl with the potato.   Toss to mix thoroughly.  Spray waffle iron with non-stick spray. Add potatoes to the waffle iron and cook until desired crispiness is achieved* (5-7 minutes).  Makes 2 waffles.

*Follow the manufacturers directions of your waffle iron.
