Sweet Coconut Dessert Waffle

Waffles for dessert? Yes...absolutely! Like I've said in many of my previous posts, the possibilities are endless.  I actually prefer them to many traditional desserts.  Waffles allow you to play with the consistency and texture...spongy and moist like cake, warm and crispy like a cookie.  They can be eaten with your hands for a more casual setting (I've served them at a barbeque and my guests were raving) or with utensils for a more formal setting. They can be topped with chocolate sauce, caramel, or fruit or eaten plain and simple. I just can't rave about waffles as dessert enough.  This recipe is simple.  The taste is subtly sweet, but that's what makes it perfectly delightful.  Enjoy!

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3-1/2 teaspoons baking powder
  • 2 large eggs, separated
  • 1-1/2 cups milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • Desired toppings

Directions:

Preheat your waffle iron. Combine flour, sugar, and baking powder.  In a separate bowl, lightly beat egg yolks and add the melted butter, milk, coconut and vanilla extract.  Mix well.  Stir the wet ingredients until combined and gently mix into dry ingredients.  Finally, beat the egg whites until still peaks are formed and fold into the batter.  Follow the manufacturers directions of your waffle iron.  Add desired toppings.   Add desired toppings. Makes 8-10 waffles.
