Toasted Coconut Honey Carrot Waffle
Healthy and delicious...two words that sometimes aren't used together...until now. This waffle not only offers a healthier, grain free alternative to your ordinary waffle, but the taste will give you a different perspective on "healthy and delicious". This waffle is sweet, nutty and crunchy and offers a perfect bite without the guilt. Enjoy!
Ingredients:
1 10oz. bag of matchstick carrots
2 eggs
1 tablespoon coconut oil
2 tablespoons honey
1/4 cup shredded coconut, toasted
1/4 cup walnut pieces

Directions:
Preheat your waffle iron. In a large pan, toast shredded coconut on medium heat. Stirring often, watch to see the coconut browning. Remove from heat and set aside in a bowl. Wipe pan and heat coconut oil using medium heat. Add matchstick carrots. Cover pan and cook for 4-6 minutes, stirring frequently. Remove from heat and set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat eggs. Add honey and mix. Pour the mixture to the bowl with the carrots. Add toasted coconut and walnuts. Toss to mix thoroughly. Spray waffle iron with non-stick spray. Add carrot mixture to the waffle iron and cook until desired crispiness is achieved* (3-5 minutes). Top with desired toppings (a drizzle of honey, maple syrup or fresh fruit). Makes 2 waffles.
