Strawberry Belgian Waffle
Sometimes the perfect waffle..in my opinion...needs a twist. By adding strawberries you create a tartness that compliments the subtle sweetness of my Belgian waffle. Still sweet enough to eat without syrup, a perfect balance is created. My kiddos (including my husband) absolutely love this waffle, specially because they can eat it on the go. Enjoy!
Ingredients:
2 cups all-purpose flour
3/4 cup sugar*
3-1/2 teaspoons baking powder
2 large eggs, separated
6-7 ripe strawberries
1-1/2 cups milk
1/2 cup butter, melted
1 teaspoon vanilla extract
Directions:
Preheat your waffle iron. Combine flour, sugar, and baking powder. In a separate bowl, lightly beat egg yolks and add the melted butter, milk and vanilla. Mix well. In a blender or food processor, add strawberries and pulse until desired consistency is achieved, then add to wet ingredients. Gently mix wet ingredients into the dry ingredients. Finally, beat the egg whites until still peaks are formed and fold into the batter. Follow the manufacturers directions of your waffle iron. Makes 8-10 waffles.
*Before starting to mix your dry ingredients, determine what toppings you will be using. The sweeter the topping, the less sugar is needed.
