Chocolate Belgian Waffles
Today's recipe is a quickie. Chocolate Belgian waffles have become a Sunday morning tradition in our house. My boys know that Sunday morning will mean washing up to these special waffles for breakfast. These waffles are sweet and my bits rest them by themselves with no toppings, but I do use this recipe as well for a dessert, but I "fancy" it up with a fruit topping...usually raspberries to balance the sweetness and refine the taste to a more sophisticated one. Enjoy!
Ingredients:
- 2 cups all-purpose flour
- 1 cup sugar
- 3-1/2 teaspoons baking powder
- 1/2 cup cocoa powder
- 2 large eggs, separated
- 1-1/2 cups milk
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- Desired toppings
Directions:
Preheat your waffle iron. Combine flour, sugar, cocoa powder, and baking powder. In a separate bowl, lightly beat egg yolks and add the melted butter, milk, vanilla extract. Mix well. Stir the wet ingredients until combined and gently mix into dry ingredients. Finally, beat the egg whites until still peaks are formed and fold into the batter. Follow the manufacturers directions of your waffle iron. Add desired toppings. Makes 8-10 waffles.
