Loaded Spiralized Potato Waffle
That's a mouthful...literally. This waffle is packed with all of the goodies that you would expect from a loaded baked potato...cheese, bacon, chives (I used green onion because I could not find any fresh chives at the market today), and sour cream. What this waffle will offer that you won't get fro a baked potato is a crispy outside. It can be served as a side dish or as a meal itself. It's just simply delicious. Enjoy.
Ingredients:
6 large spiralized red potato
2 egg
1 tablespoon bacon grease
5 slices bacon, thick cut
1/2 cup cheddar cheese, shredded
1/4-1/2 cup green onion, diced
Adobo seasoning to taste
Sour cream
Directions:
Preheat your waffle iron. Heat a medium pan using medium heat. Add bacon and cook to desired crispiness. Remove bacon and grease leaving about 1 tablespoon of grease. Cut bacon into small pieces and set aside. Add spiralized potato and Adobo seasoning. Cook for 5-7 minutes, tossing frequently until potato is cooked. Set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat egg and add it to the bowl with the potato. Add bacon, green onions, and cheddar cheese. Toss to mix thoroughly. Spray waffle iron with non-stick spray. Add potatoes to the waffle iron and cook until desired crispiness is achieved* (3-5 minutes). Top with a dollop of sour cream. Makes 4 waffles.
*Follow the manufacturers directions of your waffle iron.
