Spiralized Cinnamon Sweet Potato Waffle

Ingredients:
1 large spiralized sweet potato
1 egg
1 tablespoon coconut oil
1/4 teaspoon cinnamon

Directions:
Preheat your waffle iron. In a large pan, heat coconut oil using medium heat. Add spiralized sweet potato and cinnamon. Cook for 5-7 minutes, tossing frequently until sweet potato is cooked. Set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat egg and add it to the bowl with the sweet potato. Toss to mix thoroughly. Spray waffle iron with non-stick spray.
