Spiralized Cinnamon Apple Sweet Potato Waffle

Now that's a mouthful...of yummy, healthy goodness, of course.  This waffle offers a delicate sweetness and is a healthy alternative to your traditional waffle.  The subtle apple and cinnamon flavors merge perfectly with the sweet potato.  This waffle can simple be enjoyed on its own or add a drizzle of honey for a sweeter bite.  Enjoy!

Ingredients:

2 large spiralized sweet potatoes
2 spiralized apples
2 eggs
1 tablespoon coconut oil
1 tablespoon coconut sugar
1/4 teaspoon cinnamon
Desired toppings

Directions:

Preheat your waffle iron. In a large pan, heat coconut oil using medium heat.  Add spiralized sweet potato and cinnamon. Cook for 3 minutes.  Add the spiralized apple and coconut sugar and continue cooking for an additional 2-4 minutes tossing frequently until sweet potato is cooked. Set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat eggs and add it to the bowl with the sweet potato and apple.   Toss to mix thoroughly.  Spray waffle iron with non-stick spray. Add sweet potatoes to the waffle iron and cook until desired crispiness is achieved* (3-5 minutes).  Top with desired toppings (a drizzle of honey or fresh fruit).  Makes 1-2 waffles.

*Follow the manufacturers directions of your waffle iron.
