Banana Chocolate Sweet Potato Waffle
This waffle has quickly become a favorite in my house. I mean...who can go wrong with bananas and chocolate? This waffle offers you a healthier alternative to your ordinary waffle. Five ingredients is all you need. The banana gives you a subtle sweetness that compliments the sweet potato. The chocolate is dispersed throughout the waffle and offers you hidden surprises with every bite. Though toppings are optional, I prefer a drizzle of honey. My husband...on the other hand...drizzles his with chocolate syrup (not too healthy, but it gets him eating a healthier waffle). Enjoy!
Ingredients:
2 large spiralized sweet potatoes
2 bananas, mashed
2 eggs
1 tablespoon coconut oil
1 1/2 teaspoons vanilla
3-4 tablespoons Hershey's Kisses, chopped (chips can be used also)

Directions:
Preheat your waffle iron. In a large pan, heat coconut oil using medium heat. Add spiralized sweet potato. Cook for 3-5 minutes. Set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat eggs. Add vanilla, chocolate and the mashed bananas and mix. Pour the mixture to the bowl with the sweet potato. Toss to mix thoroughly. Spray waffle iron with non-stick spray. Add sweet potatoes to the waffle iron and cook until desired crispiness is achieved* (3-5 minutes). Top with desired toppings (a drizzle of honey or fresh fruit). Makes 2 waffles.
*Follow the manufacturers directions of your waffle iron.
