Sour Cream and Onion Potato Waffle
Who doesn't love sour cream and onion potato chips? Why not use these flavors to create a delicious waffle? I tried it and succeeded. No fancy ingredients needed either. Though onions give foods a distinct, strong taste...the sour cream provides a balance that make these two flavors compliment each other. This waffle is versatile in that it can be served as a main dish or as a side dish along with your favorite protein. Enjoy!
Ingredients:
4 spiralized red potatoes
1 small spiralized yellow onion
2 eggs
1 tablespoon olive oil
4 heaping tablespoons sour cream
Adobo seasoning to taste
Salt to taste
Pepper to taste
Parsley (optional)
Directions:
Preheat your waffle iron. Heat a medium pan using medium heat and add oil. Add spiralized potato, spiralized onion and desired Adobo seasoning, salt, and pepper. Cook for 5-7 minutes, tossing frequently until the potato and onion are cooked. Set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat egg and mix in 2 heaping tablespoons of sour cream. Add it to the bowl with the potato and onion. Toss to mix thoroughly. Spray waffle iron with non-stick spray. Add potato mixture to the waffle iron and cook until desired crispiness is achieved* (3-5 minutes). Top each waffle with a dollop of sour cream and a sprinkle of parsley (optional). Makes 2-3 waffles.
*Follow the manufacturers directions of your waffle iron.
