Honey Pecan Raisin Sweet Potato Waffles
Sometimes you look in your refrigerator and decide to throw ingredients together to create a new recipe. Sometimes it works, sometimes it doesn't. This time, my ingredients that I threw together were a perfect match. The sweet potato and honey offer an overall subtle sweetness. The raisins also add a hidden punch of sweetness. Finally, the pecans give you a little crunch. Topped with more raisins and pecans and a drizzle of honey, these ingredients deliver a perfectly balanced sweet and crunchy bite. Enjoy!
Ingredients:
2 large spiralized sweet potatoes
2 eggs
1 tablespoon coconut oil
2 tablespoons honey
1/4 cup raisins
1/8 cup pecan pieces
Desired toppings
Directions:
Preheat your waffle iron. In a large pan, heat coconut oil using medium heat. Add spiralized sweet potato and raisins. Cook for 3-5 minutes. Set aside in a large bowl to cool for 5 minutes. In a separate bowl, lightly beat eggs. Add honey and mix. Pour the mixture to the bowl with the sweet potato and add pecans. Toss to mix thoroughly. Spray waffle iron with non-stick spray. Add sweet potatoes to the waffle iron and cook until desired crispiness is achieved* (3-5 minutes). Top with desired toppings (a drizzle of honey or fresh fruit). Makes 2 waffles.
